Blog Swap! Meet Kimberly!

I would like to introduce you all to Kimberly at My Pinterest Reality. We have swapped blogs today and I wrote up a Pinterest tutorial for Kimberly's readers. I never do tutorials and I'm nervous that it didn't work out. Please go over and read the post.

Hello Esther Norine Designs readers.  I'm Kimberly from My Pinterest Reality and I'm so excited to be writing a spot on Esther's blog.  She asked I write about a healthy 'pin' and I immediately knew which one to write about.  A couple of months ago when the weather here in the Northeast was making a turn to Fall, I decided it was soup season.  I {heart} soup.  I love the smell that radiates the house when it's cooking, the comfort it gives me when it's cold outside but most of all I love how one batch can last me for a full week.  
The soup 'pin' I tried out was more for my husband then myself.  I'm not a huge fan of Mexican food but when I found the 'pin' for crock pot tortilla soup, I had to try it.  It was great for his lunches throughout the week not to mention it's easy to make. If you're vegetarian, you can omit the chicken and you still have an awesome, fulfilling soup.

4-6 chicken breasts, cooked & diced
1- 28 oz can of diced tomatoes
1- 14 ounce can enchilada sauce
1 medium onion, chopped
1 can chopped green chilies (I used fresh from our garden)
1 tablespoon of minced garlic
32 ounces of chicken broth
1 teaspoon cumin
1 teaspoon chili powder
Salt & Pepper (to taste)
1- 10 ounce package frozen corn

1. Boil your chicken breasts until fully cooked. This is usually about 15 minutes.

2. When the chicken breasts are fully cooked, cut them up.

3. Place diced tomatoes, enchilada sauce, onion, green chilies, mined garlic & corn into the crock pot.





4. Pour in chicken broth. 

5. Add cumin, chili powder, salt and pepper.


6. Add chicken.

7. Stir to combine.

8. Cover and cook on Low for 5 to 6 hours or on High for 2 to 3 hours.

9. Stir and enjoy with a slice of avocado, low fat sour cream and corn chips.
